We feature unique sausage recipes created by Mark Gregory MCA and made by the Blackball Salami Company. We think they’re NZ’s finest sausage makers. Since the mine closed they’ve kept the town of Blackball going. They’ve survived the business being burnt to the ground and worse but have never compromised the quality of their meat. The spirit of the pioneers of Blackball lives on here.
